CARAMELISED BRUSSELS SPROUTS
- Add Italian sausage to a cold pan, turn heat onto high to render fat. Once crisp remove sausage, add brussels sprout cut side down cook for 8- 10 minutes or until charred.
- Meanwhile make the dressing. Add ½ of the red chilli, caster sugar, rice wine vinegar, fish sauce, mirin, soy sauce, grape seed oil and lemon juice to a bowl, stir taste for seasoning and set aside.
- Once spouts are cooked, return sausage to pan and spoon over dressing, give the pan a toss and cook for 1 minutes.
- Serve with remaining chilli as garnish.
BEN'S TIP: You may not use all of the dressing so place it into a jar and it will keep in the fridge for an Asian dressing.
