CATCH UP COOKIE
- Preheat oven to 160C. Line a spring form 26cm tin with baking paper. Into a food processor add butter, caster sugar, bicarb soda, brown sugar, cocoa powder, flour and egg. Pulse until it turns to a soft dough, transfer dough into tin and push down with a spatular.
- Add as many white and dark chocolate chips as you like, pinch of salt and push chocolate into dough. Cook in oven for 20-25 minutes. Allow to cool before taking out of tin.
- To serve, place a scoop of ice cream in the middle of cookie.
