OPEN CHICKEN SANDWICH
- To make dressing , into a food processor add ¼ bunch coriander, juice of 1 lime, yoghurt, tahini and salt and blitz until smooth and set aside.
- Add juice of 1 lime into a bowl, cut each chicken breast into ⅓ and place into the bowl with lime juice. Add chilli ,salt and oil to the chicken and leave for 10 minutes turning after 5 minutes.
- To a hot pan add oil and chicken and cook for 10 minutes then turn. When cooked take out chicken and allow to rest. Place buns in pan cut side down to toast.
- To serve on one half of bun spread dressing and top with chicken. On other half, add avocado, rocket and drizzle with dressing.
