PICKLED RED ONION
- Place the, vinegar, sugar, water, peppercorns, bay leaves, lemon juice and salt in a medium saucepan over high heat. Bring to the boil, stirring until sugar has dissolved.
- Remove from heat, place onions into the saucepan for 30 seconds stir then take out and place into iced water. Allow the pickling liquid to cool then return onions to pot. Place onions into a jar or container leave in fridge until needed.
