WHITE CHOCOLATE & RASPBERRY FRIANDS
- Preheat oven 170°C. Into a bowl of a stand mixer add egg whites and whisk on a high speed until they just starts to foam. Turn speed down, and gradually pour in butter. Add almond meal, plain flour, icing sugar, vanilla beans and salt. Once everything is combined, take bowl off and add chocolate and raspberry and fold together.
- Place mixture into a pipping bag and pipe into a small or large size muffin tray. Transfer into oven and bake for 20 minutes for small Friands or 30 minutes for large.
- Serve by sifting icing sugar over the top.
BEN'S TIP: For a gluten free version replace plain flour with 125 g rice flour.
