PRAWNS WITH SALSA
- Peel prawns and place meat into one bowl, shells into another. Into a pan that is on high heat add 100 ml olive oil and prawn shells, cook for at least 20 minutes.
- Into another pan on medium, heat oil and add pawn meat and cook for 1- 1½ minutes each side. When cooked remove prawns, then to same pan add anchovies, garlic, olives, jalapeño, tomatoes, red onion, , parsley, pinch of salt, and add 2 tbsp of oil from prawns and lemon juice.
- To serve transfer prawns to serving plate, top with salsa and a drizzle of prawn oil. garnish with parsley micro herbs
BEN'S TIP: Strain the prawn oil and transfer into a jar to use later.
