CURRIED MEATBALLS WITH BAKED EGGS
- Heat oil in a pan on high, add onion, garlic, ginger cook for 10 minutes or until onions are soft and caramelised. Add KEEN'S Curry Powder and cook for 1 minute. Add baby spinach and turn off heat and allow the residual pan heat to wilt spinach. Transfer into a bowl to cool.
- Add mince to the onion mixture, season with salt, mix to combine. Using wet hands roll mince mixture into a golf ball size ball. Place into a pan and cook until brown (don’t over cook). Add Arrabbiata sauce and stir to coat meatballs. Break eggs into pan spacing them around the meatballs. Place the pan under the grill until eggs are cooked.
- Serve with micro herbs for garnish.
