250 g Barilla Collezione Rigatoni
200 g spec, remove skin, roughly diced
2 whole eggs
2 egg yolks
50 g pecorino cheese, grated
50 g parmesan cheese, grated
1 garlic clove, finely diced
Salt, to taste
Parsley, for garnish
- Into saucepan of boiling, salted water add the pasta and cook for 8 minutes, meanwhile into a pan that is on a high heat add spec and cook for 5 minutes.
- Into a bowl add eggs, pecorino and parmesan cheese, salt and whisk to combine. Strain pasta when cooked and return pan.
- Add spec to pasta then tip to the bowl with the egg mixture and stir very quickly so the eggs don't scramble. Add more cheese if desired and stir until it’s combined.
- Serve with parsley for garnish.
