1 tbsp olive oil
1 brown onion, diced
2 garlic clove, diced
1 red chilli, thinly sliced
1 kg mussels
410 g jar Arrabbiata Barilla
30 ml vodka
Juice of 1 lemon
1/2 bunch parsley, roughly chopped, for garnish
- Place oil into a pan and turn heat to high, add, onion, garlic and chilli, stir and cook for 5 minutes until onions have softened. Add mussels into pan cover and cook for 2-3 minutes.
- Remove lid and add the Barilla Arrabbiata sauce replace lid and shake pan to coat mussels. Remove lid and add Vodka, lemon juice and¼ of the bunch parsley. Replace lid turn off heat and shake.
- Serve top with left over parsley to garnish.
