BESSEMER RICOTTA PIKELETS
- In a mixer, combine the flour, eggs, milk, 3 tbsp sugar, vanilla and rum.
- In a small bowl, mix lemon zest, remaining sugar and ricotta.
- Pour the batter to a Bessemer Gourmet Griddle Pan. Add a small spoonful of ricotta mixture in the centre of each pikelet. Wait for small bubbles to appear at the surface before flipping.
- Dust with icing sugar and serve.
