- Preheat oven to 180°C. Release fat away from meat with a sharp knife, so it opens up like a book then remove fat and discard.
- Evenly spread mustard over the meat then add sliver beet, cheese, bacon and mushrooms. Roll up the beef making sure that the flap is facing you. Secure with bamboo skewers.
- With cooking twine, string the roll together. Oil the meat and place into a hot griddle pan that is on high heat and sear the meat until it’s just brown, then transfer into oven for 18-20 minutes or until cooked to your liking.
- Remove from oven and place back onto the stove top on medium heat and add the garlic, butter, oil and rosemary to pan and baste the meat with liquid. Rest for 6- 8 minutes.
BEN'S TIP: After stringing the beef together you can cut sections off to make steaks.
