OPEN SCHNITZEL SANDWICH
- Place bacon into a griddle pan and turn onto high, cook until bacon is crispy and fat has rendered. Remove bacon and place onto a cloth to absorb excess oil and set aside. Place bread into same pan to char and soak up the bacon fat.
- Meanwhile add around 1cm of oil to a frying pan and turn heat over a medium heat. Carefully place schnitzels into frying pan and cook for 3 minutes, then turn and cook for further 1-1 ½, remove and place onto the cloth with bacon.
- Take bread out from griddle pan and add the mushrooms to pan cook for 2 minutes and turn and cook for a further 2 minutes.
- To serve, spread mayo over one slice of bread, spread mustard on another, then add lettuce, avocado, tomato mushroom bacon on both and schnitzel more lettuce and squeeze of lemon juice. Then keep building to how ever you like your sandwich.
