- Preheat oven 180°C. Place pumpkin into a steamer and cook for 15 minutes or until tender. Into a small frypan place butter, garlic and bacon and cook until translucent.
- Transfer pumpkin into a bowl and mash, then add bacon, parsley and parmesan. Break eggs into another bowl, add cream and whisk to combine. Fold eggs into pumpkin mixture and season with salt and pepper.
- Line quiche dish with pastry and pour egg mixture into the dish and place into the oven for 30 minutes or until golden brown.
