PEARL BARLEY SALAD
- Into a pan that is a high heat add oil and chicken cook for 5 minutes and until brown in colour, turn and cook for another 5 minutes. Remove chicken from pan and set aside.
- Add onion, mushrooms, oil and a pinch of salt to the same pan and cook until mushrooms have reduced in size and changed colour. Return chicken to pan, cook for 5 minutes or until chicken is cooked through.
- Add barley, lemon zest and juice, spinach, thyme and salt to chicken. Turn heat off stir and allow the residual to wilt the spinach.
