SPICED BREAD & BUTTER PUDDING
- Preheat oven 160°C. Add brandy and sultanas to a small bowl and set aside. Add milk, bay leaf, allspice and rosemary into a saucepan and bring to a simmer (don't boil) turn off heat and set aside to allow the milk to be infused with spices.
- Whisk eggs, sugar, cream and salt together in a large bowl to combine. Place the bread into egg mixture. Pour the infused milk over the bread and set aside to allow bread to absorb the liquid.
- Add 1/2 the sultanas into the bread mixture and fold through. Pour mixture into a grease oven proof dish and spread out evenly. Scatter remaining sultans and butter to the top of the dish and sprinkle with demerara sugar. Bake in preheated oven for 35-40 minutes.
BEN'S TIP: stale bread will work best for this.
