- Place bacon in a large cold frypan, turn onto a medium heat and cook for 5 minutes or until bacon is crisp and fat has rendered. Add brussels sprouts to pan cook for a further 5 minutes or until sprouts are charred and browned.
- Remove brussels sprouts from pan, turn heat down add onions with oil and salt cook until onion caramelise. Add seeded mustard, creme fraiche and return brussels sprouts to pan, stir.
- Serve with parsley for garnish.
