- Preheat grill. Heat oil in a frying pan over a medium heat. Add onion and garlic, cook for 5 -8 minutes or until soft and translucent.
- Stir in carne asada, fennel seeds, chilli, sweet paprika and cumin to the onions and cook for 1 minute or until aromatic. Add capsicum and cook for 30 seconds then add tomatoes, salt, stir and cook for 5 minutes or until mixture thickens slightly. Remove from heat.
- Break eggs one at a time into a bowl. Using a spoon make 2 evenly spaced indents in mixture and tip in eggs into indents and place under the grill. Cook until eggs are to your liking.
- Serve with goat's cheese, parsley for garnish and sizzle with oil.
