- Pre heat oven 180°C. Combine sugar and 3 egg yolks, whisk. Add remaining 3 yolks and whisk. Add cream, milk and vanilla to the egg mixture, stir and transfer into a pouring jug.
- With a cookie cutter cut out circles from the Borg’s pastry. Press each pastry circle into a greased hole of a 12 hole muffin tin.
- Pour in the custard mixture ½ way up the pastry case and add blueberries to each one. Place into the oven and bake for 20-25 minutes or until the custard is set and pastry is golden.
- Serve with sifted icing sugar.
