1 tbsp oil
1 red chilli, thinly sliced
1 garlic clove, thinly sliced
410 g Ardmona Crushed Tomatoes
Salt, to taste
150 g smoked mussel meat, roughly chopped
1 tbsp soy sauce
1 tbsp balsamic
200 g Barilla Pappardelle, pre-cooked
Handful cherry tomatoes, halved
1 spring onion, thinly sliced, to garnish
- Heat oil in a frying pan over a medium heat. Add chilli, garlic and cook for 5 minutes until to softens and become aromatic. Add Ardmona tomatoes, salt, stir and cook for 1-2 minutes or until reduces by half.
- To the pan add mussel meat, soy sauce, balsamic vinegar, pasta and stir to coat . Remove from heat , add cherry tomatoes and stir.
- Serve with spring onions for garnish.
BEN'S TIP: Cook pasta as usual but leave it slightly undercooked. Drain and toss with a little olive oil and store in a sealed container in the refrigerator until needed.
