- Preheat oven 180°C.
- Into a small saucepan on medium-heat, add butter and sugar (reserve a tsp of sugar for later) and allow butter to melt, then remove from heat. Into a bowl add apples, lemon zest and juice, squeeze a small amount of juice into the saucepan with butter. Add cinnamon and vanilla to butter, stir and pour over the apples, toss to coat and set aside for 5 minutes.
- Meanwhile cut out 10cm circles from pastry and place onto oven tray lined with baking paper. Place apples onto the pastry leaving roughly 1cm from the edge. Fold in the edges, sprinkle with left over sugar and bake in the oven for 25-30 minutes.
