BACON FRENCH TOAST
- In a large frypan over a medium heat add bacon and cook for 2-3 minutes until golden. Remove bacon from pan and add mushroom, with a pinch of salt. Cook until mushrooms have reduced in size and brown, remove from heat.
- Combine the eggs, cream and salt into a shallow dish and mix. Soak one slice of bread in egg mixture to absorb liquid. Brush melted butter onto the frypan and turn to a low heat. Transfer bread from dish and place into the frypan, egg-side down.
- Place a layer of mushrooms, cheese and bacon onto the bread and repeat. Place second slice of bread on top. Brush with egg mixture allow to soak in then give it a second coat. Cook for 2-3 minutes each side or until golden. Cut into half and serve with pesto on the side.
