CREAMY PESTO MUSSELS
- Heat oil in a large wok or saucepan over a high heat. Add chillies and cook for 30 seconds or until aromatic. Add pesto, stir and then cook for 1 minute then add mussels, stirring to coat. Cover and cook for 3 minutes or until the mussels open. Remove lid and add cream and stir, replace lid and cook for 1 minute. Remove from heat.
- To serve, toss parsley though and squeeze lemon over the dish. Place mussels into a serving bowl and pour the remaining sauce over the top.
