- In a frying pan over a medium heat add onions and chorizo, cook for 5 minutes or until soft and translucent. Add tomatoes and chipotle and salt, stir and cook for 2 minutes then add stock, cook 5 - 10 minutes to reduce liquid by half.
- Add black beans into the tomato mixture and stir. Heat oil in another frying pan over a medium heat. Season the prawns with salt and add to the pan. cook for 2 minutes or until prawns are cooked.
- Transfer prawns into the frypan with the tomato mixture and stir to coat. Spoon out onto a serving plate and add spring onion and parsley for garnish.
