- Pre heat oven 180°C. To make the sauce, heat oil in a saucepan over a medium heat. Add onion and garlic and cook for 5 minutes until onion is soft and caramelised. Add tomatoes and stock, bring to the boil and allow to reduce by half. With a stick blender blitz sauce until smooth.
- To make the chicken wellingtons. Lay 3 pieces of prosciutto per chicken breast down onto a board and roll around each breast of chicken. Cut pastry into strips and roll around the chicken and prosciutto. Place into the oven and bake for 30-35 minutes.
- To serve, cut chicken in half pour over the tomato sauce and chives to garnish.
