MURRAY VALLEY PORK CHEEK COCIDO
- Preheat oven 140°C. Heat oil in a frying pan over a medium heat then add pork cheeks and cook until brown on both sides add water and cover. Transfer into the oven and bake for 1 1/2 hours.
- Once cheeks are ready remove from pan cut in half and place back into pan cut side down. add onion spec chorizo and stir and cook for 10 minutes until onions are soft and caramelised.
- Add Ardmona tomatoes, chipotle, salt and stir and cook for 2 minutes. Add stock stir and taste for seasoning. Add beans then stir remove from heat and serve.
