FENNEL & LEMON ROASTED SALMON
- Pre heat oven 220°C. Line a baking tray with a layer of foil then a layer of baking paper. Add fennel, salmon, salt, lemon zest and juice and place into and cook for 12 minutes.
- Into a bowl add pesto and butter and mash together until combined. Remove salmon from the oven and spoon over the pesto butter and return to oven for 30 seconds to melt butter to form a sauce.
- Serve with a squeeze of lemon and pinch of salt and micro herbs or mint leaves to garnish.
