SPICED APPLE CAKE
1/3 cup caster sugar
1 tbsp cinnamon
3 Royal Gala apples, cores removed & roughly diced
2/3 cup caster sugar
1 1/4 cup self-raising flour
Pinch of salt
125 g butter, melted
3/4 cup milk
1/4 tsp nutmeg
1 tbsp vanilla bean paste
2 tbsp caster sugar, to sprinkle
1tsp cinnamon, to sprinkle
- Pre-heat oven to 180 degrees Celsius.
- Into a large mixing bowl, add the apples and cover them in cinnamon and caster sugar. Stir.
- Into another medium mixing bowl, add and mix caster sugar, flour, salt. Then make a well in the centre of the flour and add both eggs, stirring to combine. Then add in the melted butter, milk, vanilla paste and nutmeg. Gently fold together a with a large mixing spoon.
- Put the macerated apples into an ovenproof frypan and cover with the cake batter. Cook on low heat for 35-40 minutes. Dust with the remaining cinnamon and sugar.
