MEAT PIES WITH CARAMELISED ONION AND BLUE CHEESE
INGREDIENTS (MAKES 12)
200g beef mince
4 puff pastry sheets
1 garlic clove, finely diced
1 tbs worcestershire sauce
small bunch of rosemary, leaves only, finely chopped
1/4 cup strong, hard cheese, finely grated
1 egg white
salt, to season
centimeter thick slice of blue cheese, crumbled
1 caramelised onion, sliced
Preheat oven to 180 degrees.
Stat by making the patty mix, add the beef, garlic, Worcestershire sauce, rosemary, cheese, pinch of salt and egg white. Mix with your hands until combined and sticky. Form mixture with your hands into centimetre thick patties.
In an oiled fry pan on high heat cook the patty's until they caramelised. Leave them to cool in the fry pan and make the rest of your filling.
Cut the pastry with a biscuit cutter and line them up on a lined baking tray. Place the patties on top with an even sprinkle of blue cheese and caramelised onion on each. To cover the patties cut 12 larger circles out of the pastry, place over the top and crimp the edges together with a fork. Trim the edges with a cutter to even them up. Brush with some egg wash and in the oven for 20 minutes.
