SALMON SASHIMI WITH SALSA

- To make the salsa combine, the apple, shallot, pineapple, chillies, and ginger. Drizzle with lemon juice and season with salt. Stir to combine.
- To make the mayonnaise, combine kewpie mayonnaise, lemon zest, salt.
- To serve arrange the sashimi neatly on a plate, pipe the kewpie mayonnaise on top and garnish with the salsa.
