EMMA'S STICKY BEEF RIBS
PREPARATION: 2hrs ~ COOK: 1hr 20min ~ READY IN: 3hrs 20min
4 beef ribs, cut across the ribs with 3 pieces per rib
2 cups of tomato sauce
1 onion, finely chopped
8 cloves of garlic
½ cup oil (any variety is fine)
½ cup maple syrup
½ cup brown sugar
1 tbsp Hillfarm Apple Cider Vinegar
1 tbsp tomato paste
1 tbsp Worcestershire sauce
4 tsp smoked paprika
1 tsp KEEN'S Mustard Powder
Zest and juice of 1 orange
1/3 cup smokey single malt whiskey
4 tsp sea salt
Good grind of black pepper
- To prepare the ribs, bring a large pot of salted water to the boil. Simmer the ribs, submerged in the water for 2 hours until soft. Allow the ribs to cool in the water.
- Preheat the oven to 180 degrees celsius.
- To prepare the sauce, combine all of the BBQ sauce ingredients in a medium-sized saucepan and bring to the boil and then simmer on a low heat for 20 minutes or until thick.
- Drain the ribs from the cooled water, and place in a roasting tray. Smear them generously with the BBQ sauce. Roast in the preheated oven for about an hour.
