GLUTEN FREE SPICED APPLE CAKE
INGREDIENTS (MAKES 1 30CM SQUARE CAKE)
4 apples, cored and cut into wedges (eights)
vanilla pod, scraped
1 cup of almond meal
1 1/2 tsp baking powder
1 tsp ground cardamom
2 tbs cinnamon
1/2 cup brown sugar
Preheat oven to 160 degrees.
In a mix master add the butter and sugar and mix for about 5 minutes or when the butter has softened and the mixture is almost white. Then with mix the master on slow add the eggs one at a time and let one combine before you add the next. Turn up the mix master and add the vanilla pod, almond meal and baking powder, let it combine then turn it off and set aside.
Add to a small bowl the cinnamon, cardamon and brown sugar and combine. Mix the spice mix with the apples and neatly aligned on a lined baking tray. Smoothly scrape the mix over the top and place in the oven for 60 - 90 minutes, checking the cake batter with a skewer to determine when cooked. Once cooked set in the fridge until cooled.
Serve with cream or creme fraiche.
