ABALONE & BLACK PUDDING PASTA

- Cook your spaghetti in salted water until al dente drain and drizzle with oil and set aside.
- Into a medium-size pan, over a high heat, sear your black pudding. Remove from heat and set aside.
- Remove the flesh from one of your duck breast and to a new cold pan bring it up to a hot temperature so your duck is crispy. Add your abalone and cook very quickly. Add your whisky and bbq sauce to the pan. Fold in your pasta.
- To serve season with salt and pepper and place your black pudding on the bottom of the plate top with the pasta and garnish with micro herbs.
