INGREDIENTS (MAKES 2)
2 pita bases
2 large tbs of tomato paste
1 dozen cherry tomatoes, halved
4 bocconcini balls, to cook and have raw
1 chilli, julienned
2 sprigs of thyme, leaves only
1 thick piece of speck, rind removed, finely sliced
4 thick slices of salami, diced
handful of fresh basil
1 lemon, squeezed
Preheat oven to 200 degrees.
Place on a lined baking tray the pita bases and spread one spoonful of tomato paste on each. Evenly place the tomatoes, anchovies, chilli, thyme leaves, bocconcini, speck and salami on each base. Place in the oven for 15 minutes.
Once they are finished in the oven add fresh basil, lemon, bocconcini and a drizzle of oil on each and serve.
