GEORGIA'S PINEAPPLE MINT SALAD

1 cup blueberries
2 tbsp Spanish onion, finely diced
3 tbsp Hillfarm Canola Oil
Zest and juice of 1 lime
1 pinch salt flakes
1⁄2 fresh pineapple, skinned and finely sliced, core left in
1⁄2 cup fresh mint leaves
- In a large glass bowl place blueberries, onion, oil, lime zest, lime juice and combine ingredients together well, gently crushing blueberries as you stir. Season with salt to taste and set aside to infuse.
- Arrange pineapple slices on a serving plate. Pour blueberry mixture over the top of the pineapple. Garnish with mint leaves. Serve on its own or pair perfectly with grilled seafood.
