3 CHEESE POTATO TARTS

2 sheets Borg's Puff Pastry, thawed, cut into rounds and docked
1 cup Ashgrove Tasty Cheddar Cheese, grated
1⁄2 cup Ashgrove Greek Style Fetta Cheese, broken up
1⁄4 cup Ashgrove Mr Bennetts' Blue Cheese
100g baby chat potatoes thinly sliced
2 tbsp HIllfarm Canola Oil
Sea salt and cracked pepper
2 tbsp rosemary leaves
1 tbsp chilli flakes
1⁄2 cup grated parmesan to serve
- Preheat oven to 200 degrees celsius. Onto a lined baking tray place your pastry rounds.
- Into a bowl combine all your cheese, chilli flakes and rosemary. Then using a mandolin slice the potatoes thinly into the bowl. Add a drizzle of oil and season with salt. Combine all ingredients using your hands.
- Arrange your cheese and potato mixture on top of your pastry rounds. Bake in the oven approximately 15 minutes until cooked and golden.
- Serve with grated parmesan, and top with rosemary flowers.
