LEMON CHOCOLATE MOUSSE
INGREDIENTS (MAKES 2)
1 cup dark chocolate
400mL Ashgrove cream
1/4 cup icing sugar
100mL Hillfarm lemon infused canola oil
handful of pretzels, crushed
raspberries to garnish
Start by melting your chocolate with the 100mL of cream over a double boiler.
While your chocolate it melting add the rest of your cream, icing sugar into a mix master. Whisk until a soft peak is formed. Transfer to a medium bowl.
When the chocolate has melted add slowly whisk in the oil. Fold the chocolate to the bowl with the cream in thirds. Place in the fridge for 5 minutes to cool.
Once the mousse is cool sprinkle some crushed pretzels and raspberries on top.
