AMARETTO SOUR DESSERT
INGREDIENTS (SERVES 2)
Amaretto syrup, pre-made, enough to drizzle over the dessert
1 cup Ashgrove cream, whipped to a soft peak
2tbs greek yoghurt
10 amaretto biscuits
12 poached apricots
Squeeze a lime into a pot with the amaretto syrup and set aside.
Crush in a mortar and pestle half of the amaretto biscuits and set aside.
Whisk the greek yoghurt into the whipped cream and fold in the crushed biscuits.
Serve in a bowl first add the apricots, then cream, a couple of biscuits and drizzle the syrup on top.
