INGREDIENTS (MAKES 1)
2 banana leaves
50g fresh dough
50g chicken tinga, (tomato, onion and chilli mix)
50g cooked black beans
Lay the banana leaf flat and then grab a pinch of dough (50g) and roll it into a ball with your hands. Make a well in the middle of the dough and add a spoonful of the black bean mix. Keep rolling in your hands and once combined lay the dough vertically along the banana leaf and flatten to each side of the leaf. Next add a spoonful of the chicken mix in the middle and roll the banana leaf. Peel a couple of lines from a separate banana leaf and wrap around the ends of the tamale.
Place in a steamer for 60-90 minutes.
