MYSTERY BOX PASTA

1 chorizo, sliced
2 tbsp Hillfarm Garlic Infused Canola Oil
1⁄4 cup blanched almonds
1⁄2 cup sun-dried tomatoes
1 star anise
Salt and pepper, to taste
1 Huon Wood Roasted Salmon fillet
1 lime cheek, juiced
Goats cheese, shaved to serve
Shaved parmesan, to serve
Lime cheek extra, to serve
1 packet Barilla Pappardelle All'Uovo pasta
- Into a cold medium-sized pan add the chorizo, oil and almonds, sun-dried tomatoes, star anise and bring up to a medium heat and sauté for around 4 minutes while the pasta is cooking.
- Add the pasta to the pan and stir through, bring a small amount of the pasta water into the fry pan as this will help to lubricate and moisten the sauce. Break up the salmon and add to the pan, with a squeeze of lime juice and warm through approximately 5 minutes.
- To serve top with shaved hard goat's cheese, shaved parmesan and extra lime wedge.
