1tbsp Hillfarm Lemon Infused Oil
2 slices of toasted sourdough
100 g cream cheese
Zest and juice of 1 lemon
1 tbsp finely chopped cornichons
1 tbsp grated parmesan
Huon Wood-Roasted Salmon, Lemon Pepper, broken into pieces
200 g cherry tomatoes, halved
Huon Reserve Selection Caviar (optional)
Fresh parsley to garnish
- Drizzle oil on both sides of sourdough slices and grill in a griddle pan for 5 minutes or until charred.
- In a bowl combine the cream cheese, cornichons, grated parmesan, lemon zest and juice. Mix until well combined.
- To serve spread the cream cheese mixture on the sourdough, then top with salmon, tomatoes, salmon roe and garnish with fresh parsley.
