ULTIMATE CHICKEN BLT
INGREDIENTS (MAKES 2)
4 toasted slices of sourdough bread
1 Lenards chicken fillet, halved and flattened
2 -3 thin proscuitto slices
5 thick slices Ashgrove haloumi cheese
few cos lettuce leaves
few tomato slices
2 boiled eggs, sliced
1 tbs Hillfarm ploughman's mustard
50g creme fraiche
1/4 cup Ashgrove cream
Hillfarm canola oil
CHICKEN SPICE MIX
1 tsp pequin spice
1 tbs smoked paprika
1 tbs chipotle powder
1 tbs flour
With a Glad snaplock bag add the spices, flour and chicken and shake well. Set aside.
Turn a pan onto a medium heat and place the proscuitto in and cook until crispy. Once the proscuitto is crisp take it out of the pan and begin cooking the cheese.
To make the dressing mix together the mustard, creme fraiche and cream in a bowl. Set aside.
When the cheese is cooked take it out of the pan, drizzle with oil and begin cooking the chicken.
Once the chicken is cooked build your sandwich and serve.
