SMOKED SALMON SALAD
INGREDIENTS (SERVES 1)
2 slices of Huon cold smoked salmon, roughly chopped
1 piece Huon wood roasted salmon, skin removed
1/2 cup mayonnaise
1 tsp capers
1 red onion, thinly sliced
1 baby cos lettuce, cut into quarters
2 gherkins, thinly sliced
1 egg, soft boiled
Start by making the dressing. Blitz the mayonnaise, lemon, cold smoked salmon and capers together until smooth. Set aside.
Distribute the lettuce, onion and gherkins onto a plate. Serve with the egg, salmon and dressing on top.
