HOT SMOKED SALMON WITH CRUSHED SALAD
INGREDIENTS (SERVES 1)
1 fillet of Huon lemon and pepper wood roasted salmon
1 slice of sourdough bread
few pinches of Ashgrove blue cheese
1 cucumber, de-seeded, sliced and crushed
1 shallot, sliced and crushed
4 dates, crushed
handful of dill, roughly chopped, crushed
small bunch of red grapes
Hillfarm canola oil
Add to a mixing bowl the crushed cucumber, shallots, dates, dill and a squeeze of half a lime. Crush half of the bunch of grapes and slice the remaining grapes and add to the mixing bowl. Mix all the ingredients together.
Flake in the salmon, sourdough and blue cheese. Mix together, drizzle with oil and serve.
