MINI ORANGE CAKES
INGREDIENTS (MAKES 9)
150g Ashgrove butter
1 tbs vanilla paste
2 cups self raising flour
poppy seeds to garnish
Preheat oven to 160 degrees.
Before you start making the cake place the oranges into a boiling pot of water and cook for 45 minutes.
Once 45 minutes is up take the oranges out and cut them into quarters and place in a food processor. Process the oranges for about 30 seconds and then add the butter and mix for another 10 seconds. Now add the sugar and vanilla and process again for 30 seconds and then add the eggs. Process for another 10 seconds and add the flour. Keep processing until everything is combined.
Pipe the cake mix into indiviual cake moulds and cook int he oven for 35-40 minutes.
To make the icing add the sugar, salt and a small amount of the orange juice. Whisk until a thick consistency is form add extra sugar and orange juice if necessary.
Garnish with poppy seeds and serve.
