MEXICAN PRAWN COCKTAIL
PREPARATION: 10min ~ COOK: 5min ~ READY IN: 20min
300 g cooked prawn meat, chopped
1⁄2 red onion, diced
1⁄2 cucumber, deseeded and diced
10 cherry tomatoes, cut into quarters
1 bunch of coriander, roughly chopped
1 avocado, diced
1 red chilli, cut into rounds
Juice of 1 lime
1 tbsp white balsamic vinegar
1 tbsp olive oil
100 g corn chips, to serve
- Combine all the ingredients except the corn chips together in a mixing bowl, stir gently until combined.
- Serve with corn chips.
