PRAWN AND ANGEL-HAIR PASTA
INGREDIENTS (SERVES 4)
a dozen raw prawns
1/2 packet of Barilla spaghetti
Hillfarm canola oil
1 tbs coriander seeds
1/2 brown onion, sliced
1 garlic clove, sliced
1 red chilli, sliced
1 tbs sundried tomatoes
3 marinated artichokes, peeled and halved
pinch of salt
1/2 cup Ashgrove cream
In an oiled pan over a medium heat toast the coriander seeds. Once the seeds become fragrant add the onions, garlic and chilli. Cook until everything is soft and then add the sundried tomatoes and artichokes. Cook for a further 2 minutes and add the prawns and season with salt.
Place the pasta into a boiling pot of salted water and cook for 5 minutes.
Head back to your pan and add the cream. Let it reduce a little bit.
Transfer the pasta, 2 spoonfuls of the pasta water and lime zest to the pan and turn the heat off. Serve.
