PERI PERI PRAWNS AND CHORIZO
INGREDIENTS (SERVES 2)
6 green tiger prawns
1 chorizo, sliced
1 red chilli, de-seeded and diced
1 garlic clove, crushed
2 tsp castor sugar
1 tsp smoked paprika
1/2 tsp cayenne pepper
Hillfarm pepperberry infused canola oil
Caramelise the chorizo in a pan over a medium heat.
To make the marinade add the chilli, garlic, sugar, paprika, cayenne pepper, lemon juice, pinch of salt and oil to a mixing bowl. Mix eveyrything together and add the prawns.
Head back to your pan and check the chorizo is caramelised on each side. Turn the heat up high and quickly cook the prawns with the marinade. Should only take a few minutes. Serve.
