1⁄2 cup cream
1⁄4 cup sugar
1⁄2 tsp salt
6 slices sourdough bread
10 g butter
1 tbsp sugar
75 g orange and sherbet rocky road, roughly chopped
- Break the 3 eggs into a medium mixing bowl, add cream, sugar and a pinch of salt, whisk. Place bread in mixture and coat. Put a medium sized pan on a low heat, place bread in the pan and cook for approximately 5 minutes on each side. Add in the butter towards the end of cooking, coating the toast.
- Take toast out and add the juice from 2 mandarins and the segments from 1 mandarin and 1 tbsp of sugar in the pan and stir, caramelise for 2 minutes.
- To plate set toast on serving dish, top with mandarin segments and pour caramelised juice over the top. Sprinkle rocky road over the top. Serve with ice cream.
