CHICKEN AND BACON SAUSAGE ROLLS
INGREDIENTS (MAKES 24)
1 onion, diced
1 clove garlic, chopped
4 spring onions, chopped
a few prings of thyme
1 chilli, roughly chopped
10 rashers of bacon, diced
500g minced chicken breast
1 tbs bread crumbs
2 sheets pastry
Cook onion and garlic in a pan and drizzle with oil. Once cooked add spring onion, thyme, chilli and bacon. Cook down for 5 minutes.
Put mixture into bowl and cool for 5 minutes.
Add chicken breast into mixture, a few pinches of salt and bread crumbs.
Lay pastry down and run mixture down the middle of pastry. Roll over pastry and cut into sausage roll sized pieces.
Place sausage rolls on lined baking tray and put in over for 25 minutes at 180 degrees.
Serve with BBQ sauce
