STICKY CHICKEN AND BROCCOLINI
INGREDIENTS (SERVES 2)
3 Lenards chicken thigh fillets, cut into strips
bunch of broccolini
1/4 cup water
2cm knob of ginger, finely diced
1 tbs oyster sauce
1 tbs honey
1 tbs kecap manis
Hillfarm canola oil
2 young garlic cloves, sliced
Blanch the broccolini in a boiling pot of water for no more than 30 seconds. Let it sit in a bowl of cold water.
Add to a mixing bowl the water, ginger, lime juice, oyster sauce, honey and manis. Mix together and set aside.
In a oiled pan over a medium heat and fry the chicken. Once each side is caramelised add the garlic and sauce. Keep cooking until the sauce becomes sticky.
Serve the chicken on top of the broccolini.
